Simple Guinness Irish Stew!
Sautée 1/2 lb of chopped bacon, 1 medium onion, and 1 can of tomato paste in a frying pan. Add 1 box of chicken stock and a bottle of Guinness Stout Beer.
Transfer to a crockpot. Cut a Sirloin or Chuck Roast in cubes. Flour and season with salt and pepper. Brown and transfer to crockpot. Add fresh Thyme, cook on high for three hours. Add chopped celery and carrots, reduce to low for three hours. I like a little more stout flavor, so we add an extra 1/2 bottle of Guinness. Serve over mashed potatoes or calcannon.
